I have ordered this book in advance of the products that I need to start making some of the recipes in this book. The thing that stands out the most is that all the recipes have a bottom note to make the same recipe with less sugar and that is what is so exiting to me. I have ordered the coconut flour and have coconut milk in the frozen state so all I have to do now is to find some time to make these recipes. The mufffins are a good place to start because they are portable and can be eaten on the run. I have been diagnosed with diabetes and would like more of the foods that I can eat.

I love the Coconut Cook Book because it has so many quick, simple, easy-to-make recipes using coconut oil, coconut milk and coconut flakes. The best part is that coconut is so good for you and tastes wonderful.

I've only tried a few recipes so far but, they have turned out excellent. It's nice to find recipes that actually call for coconut flour and coconut oil-rather than trying to guess at what the substitution would be. Excellent source for those looking for a gleuten-free cookbook or those trying to incorporate more coconut into their eating lifestyle.

The book gives interesting information about the health benefits of using coconut oil in cooking and some very tasty recipies.

I was looking for recipes using coconut flour. So I was disappointed that all the bakegoods used mostly whole wheat flour. There was not even one recipe using the coconut flour. I bought this book instead of the "cooking with coconut flour" because I thought it would have a mixture of recipes. The other recipes looked very good and I am looking forward to trying them.
