Every recipe contains coconut in one form or another. Some recipes such as Coconut Battered Shrimp and Coconut Macaroons use shredded or flaked coconut. Others such as Chicken A La King and Strawberry Chiffon Pie use coconut milk or cream in place of dairy. The salad dressings and mayonnaise recipes are based on coconut milk and oil.

This book contains nearly 450 recipes with a mixture of both vegetarian and nonvegetarian dishes to choose from. You will find recipes for creating savory main dishes, appetizing side dishes, satisfying snacks, and nutritious beverages. You will find recipes for dairy-free smoothies and blender drinks, creamy soups and hearty chowders, delicious curries, stews, and casseroles. Concerned about sugar? No problem. Every sweet or dessert recipe includes a low sugar version. These recipes use very little sugar or none at all.

Coconut is ideal for low-carbohydrate diets because it contains very little effective (i.e., digestible) carbohydrate. It consists primarily of indigestible fiber and, therefore, is a healthy and tasty low-carbohydrate, high-fiber food. The milk, cream, and oil are also low in carbohydrate and give foods a rich creamy taste and texture that is both healthy and delicious.

I have ordered this book in advance of the products that I need to start making some of the recipes in this book. The thing that stands out the most is that all the recipes have a bottom note to make the same recipe with less sugar and that is what is so exiting to me. I have ordered the coconut flour and have coconut milk in the frozen state so all I have to do now is to find some time to make these recipes. The mufffins are a good place to start because they are portable and can be eaten on the run. I have been diagnosed with diabetes and would like more of the foods that I can eat.

I love the Coconut Cook Book because it has so many quick, simple, easy-to-make recipes using coconut oil, coconut milk and coconut flakes. The best part is that coconut is so good for you and tastes wonderful.

I've only tried a few recipes so far but, they have turned out excellent. It's nice to find recipes that actually call for coconut flour and coconut oil-rather than trying to guess at what the substitution would be. Excellent source for those looking for a gleuten-free cookbook or those trying to incorporate more coconut into their eating lifestyle.

I was looking for recipes using coconut flour. So I was disappointed that all the bakegoods used mostly whole wheat flour. There was not even one recipe using the coconut flour. I bought this book instead of the "cooking with coconut flour" because I thought it would have a mixture of recipes. The other recipes looked very good and I am looking forward to trying them.
